Spaghetti with Mussels

Hey guys! I’ve been craving so many dishes lately (no I’m not pregnant! ? ? ). I wanted pizza, so I went to Pizza Carissimi (click here for the post). I was craving Spaghetti with Mussels and well, I went to get the ingredients. This recipe is super easy to make and ridiculously delicious!

Spaghetti with Mussels

  • 500 grams spaghetti, slightly undercooked and drained
  • olive oil
  • 3 garlic cloves, sliced
  • 1 shallot, sliced
  • 1 glass of white wine
  • 400g diced tomatoes (1 big can)
  • 1 kilo mussels, rinsed and drained
  • fresh parsley
  • salt
  • black pepper

In a deep pan, heat some olive oil. Add the sliced garlic and shallots and sauté.

When the shallots turn translucent, add the white wine. Let it boil for a couple of minutes.

Add the can of diced tomatoes to the pan. Lower the heat and let it simmer for 15 minutes.

Add the mussels to the pot. Cover and let it simmer for 8-10 minutes.

Add some roughly chopped fresh parsley and black pepper. Add salt, if necessary.

Transfer the cooked spaghetti to the pan and mix. Turn off the heat while you let the pasta absorb some of the sauce.

Serve hot and enjoy!

xoxo Elodie

P.S.: You may skip the white wine part, but personally I find that it brings extra flavor to the sauce. The alcohol will evaporate when it boils.
