I recently read Homicide & Halo-Halo by Mia P. Manansala (click here for the review) and I immediately knew I wanted to try the Adobo Chicken Wings recipe (which can found in the book).
In Homicide & Halo-Halo, Tita Rosie likes cooking this Chicken Adobo twist for parties and picnics. Because it has less liquid than the typical adobo, it's easier to eat as finger food.
In the book, the chicken wings are grilled; I adapted the recipe to make it using an air-fryer because I find it more convenient. (I just love my air-fryer!! š§”š§”)
The sauce turned out wonderfully delicious. The butter kinda threw me off at first (adobo typically does not have butter) but after a few bites I was happily eating the chicken wings.
I will definitely make this again and have added it to our family favorites! However, I won't be using any baking powder the next time. I find that it's not necessary.
By the way, I doubled the original recipe to have moreeee! šš
