Hey, you! It's officially been Spring since about a month ago in France and what I've noticed here is that once the sun starts shining, people like to have grilled meats / fish and salad. Typical salads in France include Potato Salad, Lentils Salad, Taboulé, or Carrot Salad just to name a few. These are delicious and I love a good old-fashioned French Carrot Salad, but admittedly sometimes it can get boring. So I decided to change things a little bit by playing around with flavours that I love such as fresh coriander and sesame oil.
Carrot and Coriander Salad
Ingredients:
Fresh carrots, peeled and grated
A handful of fresh coriander, washed and roughly chopped
3 tbsps sunflower oil
1 tbsps cider vinegar
1 tsp sesame oil
1 tsp sugar
1 tsp sesame seeds
Salt
Black pepper
Directions:
In a salad bowl, add the grated carrots.
In a small bowl, prepare the vinaigrette by whisking together the oil, vinegar, sesame oil, and sugar. Season with salt and black pepper.
Pour the vinaigrette on the carrots.
Add the chopped fresh coriander to the salad bowl.
As a finishing touch, add sesame seeds.
Toss well. Adjust the seasoning if needed.
