S, my 13-year old daughter, went back to school this morning after a two-week break. I had the best time with her - watching series, reading books together, baking cookies! I freak out a little whenever I think that in just a few years, she will leave our family home. Time flies way too fast and I want to take full advantage.
Anyways, I recently filmed an IG Reels. Chili con Carne is a family favorite recipe and perfect all year long! I'm not familiar with the original recipe as this is adapted from the one I usually make using the Thermomix (click here for the post).
I've tried several Chili recipes since and at restaurants too and I do have a preference for this recipe which doesn't have too much tomato sauce. Of course, if you want to try this recipe, but you like more tomato sauce, then go ahead and add more tomatoes. That goes without saying.
We like to eat Chili con Carne with rice, but I feel like this could go perfectly well with tortilla chips or fries. I have a vision of a baking dish with a layer of tortilla chips, a layer of chili con carne, a handful of grated cheese, and a few minutes in the oven to melt that cheese.
Anyways, as I said we usually serve this with rice, a dollop of sour cream (or creme fraiche), grated cheese, and fresh herbs (coriander preferably). It's creamy, perfectly spicy, and oh-so-good!
