If you've read my last post here (click here for the post), then you know that we went to the Farmer's Market last Sunday. As usual, we came home with a basket full of fresh fruits and vegetables, cheese, and of course ... a Poulet Roti (roasted chicken).
As much as we love Roasted Chicken, we can never finish a whole one at once. The Husband and S love the drumsticks and thighs and I love the wings, so we usually have the chicken breast up for grabs. After thinking about it, I realised that this was my late father's favorite part.
In our household, we never throw away food. Food is too sacred and a blessing to have. So through the years, I have come up with some of our family favourites when it comes to leftover roasted chicken. One of them is today's recipe - Leftover Chicken Fried Rice.
Fried rice is the kind of dish I turn to when I have leftover rice and I need to get dinner ready quickly. By the way, leftover rice is a must when cooking fried rice. If you use freshly cooked rice, the moisture will make the fried rice soggy and not good.
