Salmon, Broccoli, and Rice


Hey, you! It’s another week again. Thank you Lord!


I’m not usually a fan of Mondays, but this one I really don’t mind. Probably because I didn’t work this morning. Thankfully with my work, I can schedule my own time and I’m considering not working Monday mornings. I’ve been seriously thinking about that lately. I mean, if it makes me this cheerful and bubbly, then I say yes to starting my work week on Monday afternoons.


Anyways, enough babbling.



Last week, I prepared for the husband and I a plate each of Salmon, Broccoli, and Rice. It took about 15 minutes (or the time to cook the rice) in total. But you have to be good in multi-tasking.


I got home and first thing I did was prepare the rice. I’m Asian so I have a rice cooker that cooks my rice. But I still have to prepare it. I didn’t want just white rice, so what I did was add to the rice 1 tablespoon of soy sauce, 1/2 tablespoon fish sauce, a pinch of salt and black pepper, a couple drops of sesame oil, and 4 small butter cubes. The rice came out absolutely lovely.


While the rice is cooking, boil some water. Add salt when it starts to boil.


While that’s going on, heat some oil in a frying pan. Then, start frying the salmon fish skin side down. I love fried salmon skin. Yummmm!!!


Go back to the boiling water. Add your broccoli. Cook until al dente (no to mushy veggies!). Drain and rinse with cold water (to stop the cooking process). Season with salt and black pepper. Set aside.


Your salmon is almost ready. Don’t overcook it though. What you can do is tilt the pan and with the help of a spoon baste the salmon with the oil. Don’t forget to season your fish with salt and black pepper to taste.


The rice is cooked. The broccoli is ready. The fish is perfect. Make yourself a pretty plate. Add some lemon slices, sprinkle with fresh parsley, do what you want. But most especially, enjoy!
