I'm not a big fan of jam. In fact, the one and only jam I will actually eat is Strawberry. Ohhh 🤔🤔 But that also makes me think of a wonderful Strawberry-Rhubarb Jam I once had .... but then again there was also strawberry in there. The Husband goes wild for Blueberry jam. I eat pretty much everything, but that can be all his!
My grandmother has a wonderful Traditional Strawberry Jam recipe, but that recipe requires 700g of sugar for a kilogram of strawberries. That's just crazy! 😱😱 I never thought of it that way before, but jam is basically just fruit and a lot of sugar!
Anyways ...
So about 2 or 3 years ago, I started playing around with superfoods, in particular Chia Seeds. I would put those seeds (and I still do!) in my yogurt, smoothies, and even salads! Then I started reading online about using them in jams and that was it. Several trials and errors after, I had my go-to Strawberry Chia Jam.
Strawberry Chia Jam
Ingredients:
500g strawberries, washed
40g honey
40g chia seeds
1 tsp lemon juice
Directions:
Prepare your ingredients.
First, dice the washed strawberries.
Next, transfer the strawberries to a saucepan.
Add honey.
Heat on medium heat. Stir.
Cook until the strawberries soften. This should take about 5-10 minutes.
Add the lemon juice and continue to cook.
Using a potato masher, mash the strawberries until desired texture.
Add the chia seeds and stir well.
Taste. Add more honey if needed.
Take off of the heat and let it cool down completely.
Finally, transfer to a clean jar.
Enjoy immediately or store in the refrigerator (up until more or less a week).
You can eat this on toast, but also with yogurt or fromage blanc. 😋
