I've probably mentioned this a few times in my weekly meal plan posts, but we've been doing Meatless Mondays (and trying to eat less meat in general) for a few months now. We love it, but I find myself having a hard time thinking of new recipe ideas. So when I do, I like to share them, like today, my recipe for Stuffed Butternut Squash.
Butternut Squash is one of my favorite autumn food. I usually have it in a creamy, buttery soup, but I've been testing this recipe for a while and well, we simply can't get enough of it! You could probably use any vegetable and even meat if you wanted to, but we personally love mushroom, garlic, onion, and just a bit of cream!
It is a bit sweet, slightly nutty, rich, and oh so delicious! You absolutely have to try this recipe! 😁
